Mexican Corn Fritters
These colourful treats are yummy, and quick and easy enough for children to make

How To Make
• ½ can corn kernals, drained, rinsed
• ¼ C plain flour
• 1 egg, lightly beaten
• 1 green onion, finely sliced
• 1 T olive oil
Tasty Mexican mayonnaise
• 1/8 C mayonnaise
• 1/8 C sour cream
• ½ lime, finely grated rind & juice
• ½ t smoked paprika
• Pinch dried oregano
• Sea salt and pepper
1. Combine corn, flour, eggs and green onion in a bowl.
2. Heat oil in a large non-stick frying pan over medium heat.
3. Using about one tablespoon mixture per fritter, cook fritters for 4 minutes each side or until golden and cooked through.
4. Transfer to a plate lined with paper towel. Repeat with remaining mixture until all batter is cooked.
5. To make the mayo, whip all the ingredients together until creamy. Serve it in a bowl with the fritters.
